Entry Level Utility Person

Summary
The utility persons supports the Black of House (BOH) operations of the restaurant. This individual is responsible for receiving the stocking of delivery items, making sure that the BOH is clean, organized, and free of clutter. Supporting the prep cooks, this individual is also responsible for maintaining a clean work area, prepare tables, oven, bake, ovens and walk in refrigirator. In addition this person is responsible for washing of dishes, pots . pans, food delivery trays, pots, pans, and cleaning dumpster area. A repetitive job involving receiving, lifting up to 50lbs, carry, clean, cut peel, cook, heat, cool, label, store and prepare a variety of food products including meats, poultry, vegetables, sauces, stocks, breads, baked goods and other food products using a variety of equipment and utensils according to the daily prep list. Wash and clean tableware, pots, pans and cooking equipment. Keep work station, storage areas, equipment and dish area clean and organized. Completes prep list in the time allotted, and any opening or closing checklists.

Job Requirements

Essential Functions:
  • Responsible for cleaning and maintaining sanitary standards in the back of house (BOH) of each kitchen area.
  • Wash dishes, utensils, pots/pans, glassware, and delivery trays.
  • Pressure wash floor area and dumpster area.
  • Maintains a clean sanitary work station area including tables, shelves, walls, grills, fryers, saute burners, flat top range and refrigeration equipment.
  • Opens the kitchen properly and follows the opening checklist for kitchen station, and assists others in opening the kitchen.
  • Attends all scheduled employee meetings and brings sugggestions for improvement.
  • Promptly reports equipment and food quality problems, or inventory shortages to the manager.
  • Strives to learn to improve cooking skills and expands knowledge about food products and techniques.
  • Performs other related duties as assigned by the Manager or manager on duty.
  • Performs kitchen maintenance; emptying the trash, mopping floors and washing dishes.
  • Assist with the cleaning, sanitation, and organization of the kitchen, walk-in coolers and all storage areas.
  • Employee bathroom maintenance.
